pickled courgette #makeyourown
Ahhhhhhh that sight of jars in your fridge filled with fresh produce that you transformed all by yourself.
ingredients
This makes for a large 1L jar of courgette pickle:
500g courgettes
3 shallots
2 tbsp salt
100 ml rice vinegar
400 ml vinegar
150 g cane sugar
1t peppercorns
1t caraway seeds
1t mustard seeds
1t mustard powder
1t turmeric
method
With a mandolin, thinly shave courgettes and shallots. Transfer to a large bowl, add 2 tablespoons of salt and cover with ice cold water, dissolving the salt as you go. Leave that for one hour, drain well in a colander and spread out on a clean kitchen towel to dry.
Combine all of the other ingredients in a pan and bring to a boil. Lower the heat and let simmer for about five minutes. Add the courgette and shallot to the still warm pickle and scoop this into a 1L sterilized weck jar. Chill in the fridge for a few days before use.
